From farm to fork - Croatia

Main idea and brief description of the pilot area
To organize a one day (6 to 10 hour) gastronomy experience which will clearly demonstrate the path of food from farm to a finished meal. The tourist/visitor will be a part of this process, which will start on the farm and finish in the Educational Gastronomy Center located in Gortanov Brijeg near Pazin. The idea is to implement this concept only with the local breeds and varieties, which are telling a "story" so that the whole package will have also strong educational dimension.

Istria is the largest peninsula in the Adriatic Sea and it is located at the head of the Adriatic between the Gulf of Trieste and the Kvarner Gulf. Great attention has been paid to the revitalisation of agriculture over the past few years, which marked a big improvement in wine- and olive- growing, and in the system of ecologic food production. In the projects framework it is important to underline tourism development difference between the coastline (especially the on the west part) and the hinterlands.

Activities AZRRI is working on:
1. Implementation of field research, creation and presentation of a proposal together with local stakeholders
2. Establishment of connections between stakeholders form different sectors (agriculture, gastronomy and tourism) and preparation for the implementation of the planned tasks
3. Promotion of the pilot activity (press conference, Social Media, local press, related web pages)
4. Implementation of the pilot action
5. Evaluation
